Fajita is a Texan-Mexican dish which is believed to be invented by Mexican ranch workers living in West Texas. Here is the recipe of veg fajitas that is quick to make and makes your hunger satiated.

Ingredients

  • Tortillas
  • Bellpepper 2 cups
  • Onion 1
  • Zucchini 1
  • Red chilli powder 1 tsp
  • Cumin powder 1/2 tsp
  • Salt as per taste
  • Olive oil as per taste

Instructions

  • Thinly slice the onion, bell peppers, zucchini.
  • Drop the sliced veggies on a frying pan.
  • Season it with red chilli powder, cumin powder, olive oil, give it a nice mix and set it aside. When ready to eat just put the frying pan on stove with high flame and let them sizzle. Cook for 3 - 4 minutes.
  • Make sure to retain their crunchiness. Do not to over cook them.
  • Remove the frying pan from stove and finally sprinkle required amount of salt and give it a quick mix.
  • Meanwhile heat the tortillas for 45 seconds on a hot griddle.
  • Now its time to stuff the tortillas with the cooked veggies, fold and serve them along with salsa, sour cream and guacamole.

Notes/Tips

Any type of tortillas can be used (Corn, wheat, flour). Any desired veggies can be added like mushrooms, yellow squash etc. Similarly garlic powder, onion powder, fajita mix also can be added for seasoning. Chilli powder and cumin powder works just perfect for this recipe.
