- Thinly slice the onion, bell peppers, zucchini.
- Drop the sliced veggies on a frying pan.
- Season it with red chilli powder, cumin powder, olive oil, give it a nice mix and set it aside. When ready to eat just put the frying pan on stove with high flame and let them sizzle. Cook for 3 - 4 minutes.
- Make sure to retain their crunchiness. Do not to over cook them.
- Remove the frying pan from stove and finally sprinkle required amount of salt and give it a quick mix.
- Meanwhile heat the tortillas for 45 seconds on a hot griddle.
- Now its time to stuff the tortillas with the cooked veggies, fold and serve them along with salsa, sour cream and guacamole.
