- Take a large bowl add precooked quinoa rice, chopped spinach, corn, black beans, cherry tomatoes, green onions and cilantro, mix well.
- In another bowl, mix up lemon juice, olive oil, ground cumin, salt and pepper. Add this to the quinoa
- Toss and mix both the mixtures well.
