  • Precooked quinoa 1 cup
  • Corn 1 cup
  • Black beans 1 cup
  • Cherry tomatoes 1 cup
  • Cilantro 1/4 cup
  • Spinach finely chopped 1 cup
  • Green onions finely chopped 1 cup
  • Olive oil 3 tablespoons
  • Lemon juice 3-4 tablespoons
  • Ground cumin 2 tablespoons
  • Salt as per taste
  • Pepper as per taste

Instructions

  • Take a large bowl add precooked quinoa rice, chopped spinach, corn, black beans, cherry tomatoes, green onions and cilantro, mix well.
  • In another bowl, mix up lemon juice, olive oil, ground cumin, salt and pepper. Add this to the quinoa
  • Toss and mix both the mixtures well.
  • Healthy Quinoa Salad is ready to devour
  • You can also add bell peppers and other veggies of your choice.
