- Take a big bowl and break all 4 eggs into it. Season with salt and pepper and whisk well.
- Add onions and chillies and mix gently.
- Heat oil in a pan and pour in half the egg mixture into the pan.
- Cook on medium heat until the top looks done.
- Flip the omelet and cook the other side for 2 minutes.
- Butter the slices of bread and place the omelet on one slice and cheese on the other.
- Gently sandwich them together and place on the pan for 1-2 minutes until crisp.
- Repeat with the rest of the egg and serve hot!
