- Take all purpose flour, wheat flour and salt in a bowl. Mix well. Add oil and mix with your fingertips. Then start adding little water at a time and keep kneading till you get a soft, smooth dough. Cover it and let it rest for 15 minutes.
- Divide into 4 equal portions and roll each into a roti.
- Heat the pan on medium heat and semi cook the rotis from both the sides.
- Heat the oil in another pan on medium heat. Once hot add crushed ginger-garlic-green chili paste. Saute for few seconds then add frankie masala and red chili powder. Lower the heat so spices do not burn.
- Add mashed potatoes & mix well. Then add chopped coriander.
- Once it is cool to touch, divide it into 4 equal portions and shape it into a cylindrical roll.
- Heat the oil on medium heat and fry the potato rolls until golden brown in color. Place it on a plate.
- Spread the green chutney and sprinkle frankie masala, place potato roll on one side, sprinkle chopped onions on top, add a few pickled green chillies (mixture of sliced chillies & vinegar).
- Make a frankie roll by keeping the one side open and another bottom side closed.
- This street styled Frankie is ready to serve!
