Christmas is round the corner , so here is my version of Rich Dry fruit wheat Cake, I have used Dates for Sweetness, so lets get started.

Ingredients

  • Wheat Flour 1 .5 Cup
  • Milk 1 Cup
  • Ghee or Butter 1/2Cup
  • Sugar 1/2 Cup
  • Mixed Dry Fruit 1/2 Cup
  • Tutty Fruity 2 Tablespoon
  • Dates 10-12
  • Eggs 2
  • Baking Powder 1 teaspoon
  • Baking Soda 1/2 Teaspoon
  • vanilla essence 6-7 drops
  • salt a pinch

Instructions

  • Soak Dates in cold milk for minutes and blend in a nice paste
  • now add sugar powder, butter/ ghee, vanilla essence and mix nicely
  • seive all the dry ingredients, add half of chopped dry fruits and mix nicely with dry ingredients
  • Add dry ingredients in batches to the wet mixture and mix nicely
  • beat eggs and add to the cake batter, and mix using Cut and Fold method
  • remove batter in greased pan and decorate with remaining dry fruits
  • Bake in Preheated oven for 25 minutes at 150 degrees

Notes/Tips

Chop dry fruit before adding, Soak dates in cold milk only.
