This is easily prepared within 15 minutes and its then ready to eat. Time to turn the simple look of your watermelon into something more colorful. Do try this recipe.

Watermelon Salad

Ingredients

  • 2 cups Cubed seedless Watermelon
  • 1/2 cup cubed Cucumber
  • 1 Onion thinly sliced
  • 100 gm crumbled or chopped Paneer
  • Handful Mint leaves
  • 1 tbsp. Flaxseeds
  • 1 tbsp. Pumpkin Seeds
  • 2 tbsp. Olive Oil
  • 2 tbsp. Lemon Juice or Apple Cider Vinegar
  • 1 tsp Honey
  • Chat Masala( Optional)
  • Salt as per taste
  • 1/2 tsp Black Pepper

Instructions

  • To make the dressing, stir together extra virgin olive oil, lime juice, salt, freshly ground black pepper, chat masala in a small bowl
  • Add the watermelon cubes, cucumber cubes and Onion slice to a large bowl.
  • Add crumbled Paneer, chopped mint leaves, flaxseeds and Pumpkin seeds to the watermelon bowl
  • Drizzle the dressing over the melon mixture and toss to coat.
  • Salad is ready to be served

Notes/Tips

1. This recipe traditionally uses Feta cheese. Since it not easily available I have replaced it with Paneer. You can add Feta cheese in place of Paneer. 2. You can skip cucumber and onion and make only watermelon Paneer salad.
