Walnut Caramel Phirni

Ingredients

  • 1/2 litre milk
  • 1/2 cup walnuts
  • 2 tsp basmati rice soaked in water
  • 1/4 cup sugar
  • 1/2 tsp ghee
  • Pinch cardamom powder
  • Few chocolate chips to garnish
  • Walnuts corsely crushed

Instructions

  • Boil the milk and on the other side crush the soaked rice in a grinder with 2 tsp of milk. Crush the walnuts also into a fine powder form. After a boil, add crushed rice paste to it and stir it until the rice are cooked.
  • Further add crushed walnuts and cardamom powder and let it cook for few more minutes. Then switch off the flame and keep it aside.
  • For making caramel, add ghee and sugar into a pan and let it cook till sugar is completely dissolved. Then add 2 tsp of water and mix and cover for two minutes. The caramel is ready.
  • Now pour this caramel to prepared firni and give it a nice mix.
  • Delicious walnut Caramel firni is ready. Put in the refrigerator and when its cool enjoy it. While serving it, garnish it with some chocolate chips and crushed walnuts.
