Special Curd Rice

Ingredients

  • Cooked rice 1 cup
  • Ginger paste 1/2 tsp
  • Coconut oil 4 tsp
  • Curry leaf 1 sprig
  • Fresh coriander 3 tsp
  • Curd 1 1/2 cup
  • Salt to taste
  • Crushed chilly 1 tsp
  • Mustard 1 tsp
  • Red chilly 2 nos
  • Grated carrot 3 tsp

Instructions

  • Combine rice, salt, ginger, green chilly, curd and mix well. Keep aside.
  • Heat coconut oil in a kadhai splutter mustard, add red chilly, curry leaf and carrot. Saute for a while and remove from the flame.
  • Add prepared rice to kadhai and sprinkle coriander, mix well. Special curd rice is ready to serve.
  • Serve with tomato pickle, rice fritters and fried curd chilly.

Notes/Tips

Use fresh and medium sour curd for curd rice for better results
