- Combine rice, salt, ginger, green chilly, curd and mix well. Keep aside.
- Heat coconut oil in a kadhai splutter mustard, add red chilly, curry leaf and carrot. Saute for a while and remove from the flame.
- Add prepared rice to kadhai and sprinkle coriander, mix well. Special curd rice is ready to serve.
- Serve with tomato pickle, rice fritters and fried curd chilly.
