Ingredients

  • 2 huge potatoes
  • 1/2 cup all-purpose flour + more for coating
  • 1 tsp sugar optional
  • as per taste salt
  • 1 tsp freshly ground black pepper as needed,
  • 1/2 c Mozzarella cheese
  • As Required Oil for cooking

Instructions

  • Pressure cook potatoes without adding water to potatoes. Peel, cut and mash with a fork or a potato masher. in a bowl. I used Idahoe potaoes, it is starchy and not sticky.
  • Add salt, sugar and pepper powder. I got 1 1/2 c Add the flour, Mix well to make a soft but dry dough. If your potato is sticky, add a little more flour. place the dough on parchment paper. Take half cup of the potato mix to make a ball, Lightly dust your hand with flour,to avoid sticking and form a ball.
  • Slightly fltten the ball, Place about 1 tbsp of shredded Mozzarella cheese in the center, close it by bringing the edges together as you would for making kachori or mothak. Make a ball.
  • Slightly flatten the ball, coat every side with some flour and place on a dish lined with parchment paper or well floured to avoid sticking.
  • Heat a non-stick pan with about 1/2 C of vegetable oil (I used Peanut oil) and cook every side at medium heat for about 5 minutes or until evenly browned. Drain over paper towel and serve immediately.
  • When you break open the pancake you can see the gooey cheese. Serve with ketchup and tea

Taste good with ketchup or any chutney
