- Cook brown rice until soft or as per instructions given on Daawat Rice Packet (add twice quantity of water and cook for 20mins)
- For pesto: blend together 1cup Basil leaves, handful of coriander (optional), 1/4 cup walnuts, 2-3 cloves of garlic, salt, 1/8 cup olive oil, 1/4 cup parmesan (optional). You can use cream cheese for a creamy texture instead of parmesan too.
- In a pan, heat some oil, stir fry some veggies (bell peppers, broccoli, tofu, cherry tomatoes, etc) with chopped garlic. Let the veggies soften a bit. Add the cooked rice and pesto. Squeeze some lemon and mix well. Serve hot.
