Orange Malpua

Ingredients

  • 4 oranges
  • 1/2 cup sooji/ semolina
  • 1/2 cup maida
  • 1 cup + 2 tbsp sugar
  • 1/2 tsp baking powder
  • 4 tbsp powder milk
  • 1/2 cup milk
  • 2 cardamoms crushed
  • 1/2 tsp fennel seeds
  • 1 pinch orange food colour
  • 2 cups water

Instructions

  • Peel,deseed and crush oranges in a juicer or blend in a blender.Strain out all the fibres and mash the pulp in a strainer.
  • Gather the juice in a bowl.Gradually add maida,sooji,milk powder and 2 tbsp sugar.Also add crushed cardamom,baking powder and pinch of orange food colour.
  • Mix well adding milk gradually. Also add fennel seeds for added flavour.Cover and set aside for half hour for sooji to become light and fluffy.Meanwhile boil 2 cups water with sugar,a pinch of orange food colour and few orange peel.Boil till syrup is reduced and mildly sticky.Remove the peels and set aside.
  • Heat oil in a pan and fry a ladleful of batter in medium flame.When one side is done flip and fry the other side till golden brown.
  • When all the malpuas are fried, dip them in the flavoured orange syrup.Flip them till syrup coats all malpuas and gets a bright orange colour.Serve orange malpuas chilled as a delicious dessert after meals.
