Fried Rice #LKM Veg Fried Rice from leftover cooked rice. Was left with around three cups of cooked rice, so prepared Fried Rice by adding vegetables. Served with Tomato Chutney and Beetroot Curd.

Ingredients

  • 3 cups Cooked Rice
  • 2 medium Onion
  • 1 small Capsicum
  • 1 medium Carrot
  • 1 tbsp crushed Ginger
  • 3-4 Green Chilli
  • 3 tsp Biryani Masala (optional)
  • 1/2 tsp Turmeric (optional)
  • as required Few leftover Cauliflower florets
  • 2 bay leaf
  • 1 medium Cinnamon stick
  • 5 Cloves
  • 4 Cardamom
  • 1 tsp Ghee
  • 3 tbsp Oil
  • as per taste Salt

Instructions

  • Chop veggies and keep aside.
  • In moderately heated pan add all whole spices and allow to sizzle, then add onion and sauté till translucent, then add ginger + all veggies and stir fry 4-5 minutes.
  • Now add turmeric + Biryani masala and stir fry for 3-4 minutes. Add rice, mix gently, add salt + sugar and fry for 5-6 minutes under medium flame.
  • Add ghee, cover and simmer for 2-3 minutes under low flame. Veg fried rice is done.
  • Fried Rice is ready to serve.

Notes/Tips

Serve with any Chutney and raita.
