  • 2 c rolled oats
  • 1 c hung curd
  • as needed Honey
  • 1 medium size mango fruit, peeled, diced
  • 4 tbsp almond, chopped
  • 1 c mango pulp canned

Instructions

  • To make hung curd: Place 4cups of homemade curd on a cheese cloth. Fold towards the center to make a loose bundle. Do not tie. Just twist. Place the bundle on a sieve or a stem basket or a strainer. Keep it over a bowl. Leave it in a refrigerator overnight.
  • Water will drain into the bowl. Curd will get thicker. After you get rid of the water, what remains on the cheese cloth is hung curd. Empty the hung curd into a fresh bowl for using it in recipes
  • To make oat meal: Boil 3c water in a saucepan over medium heat. Stir in 1c oats. Reduce the heat, cook until the oats get soft and mushy. Turn off the heat. Cool. ADD honey, adjust the sweetness according to your taste. Over medium heat toast 2c oats in a saucepan, about 2 mins.. transfer to a bowl; cool
  • Build the multilayered parfait in a tall glass. Start from the bottom. Use 3tbsp in each layer Layer1: oats plus honey Layer2 Mango pulp Layer3 hung curd
  • Layer4: chopped mango pieces Layer5: toasted oats, nuts Layer6 Topping: mango pieces Garnish with a mint sprig You can make the layers as you please. Build the layers when you are ready to serve/ Enjoy
