Ingredients

  • 2 cups boiled rice
  • 6-8 curry leaves
  • 1/4 tsp chana dal
  • 1/2 tsp dhuli urad dal
  • 1 tsp mustard seeds
  • 1-2 dry red chilli
  • 1-2 green chilli (optional)
  • 1/4 cup roasted peanuts
  • 1 tablespoon lemon juice
  • 1 tsp turmeric powder
  • 1 tablespoon oil
  • As per taste Salt

Instructions

  • Take one non - stick pan and heat oil and add mustard seeds, dry red chili, both dal, curry leaves, green chili, and peanuts.
  • Fry for 1-2 minutes then off the flame for 2-3 minutes and let this tadka cool down. After that add turmeric powder and boiled rice. Mix well then add salt and lemon juice.
  • Lemon rice is ready. Serve it with coconut curry or you cam have this tasty rice as it is. It is perfect for tiffin and light meals also.
