- Peel the skin of lauki or bottlegourd.Slice it into 5-6 chunks.Grate lauki from all sides with a grater or in a food processor and discard centre part having seeds.Meanwhile boil milk.While boiling make a slurry of milk powder with warm milk or add khoya to the boiling milk and keep boiling till reduced to get a kheer like consistency.
- Heat ghee in a pan.Immediately fry the grated bottle gourd to avoid discoloration. While frying it will release water.Add sugar and pinch of green food colour and continue stirring till moisture is reduced.Add kheer and stir continuously so that it doesn't burn underneath.Add roasted chopped nuts,raisins and crushed cardamom powder.Stir continuously till more or less dry.
- Add 1 tsp more ghee and fry.Garnish with chopped almonds and raisins.Serve hot or cold delicious and flavourful Bottle Gourd Halwa during fasting or as an aftermeal dessert.
