Kesar Pista Matka Kulfi is a traditional Indian summer dessert where milk is thickened with chopped nuts and saffron before freezing them in terracotta mould known as matka or matki.

Ingredients

  • 2 cup Full cream Milk
  • 8 Cashews
  • 8 Almonds
  • 8 Pistachios
  • 2 Bread slices
  • 4 tbsp Sugar
  • 1 tbsp Cornflour, mixed with water
  • 1 tsp Cardamom powder
  • 6-7 Saffron strands

Instructions

  • Grind cashews, almonds, pistachios and breqd pieces in a mixer jar.
  • Grind it into a fine powder.
  • Boil milk and add this mixture.
  • Mix well and cook for 5 minutes.
  • Add sugar and mix well.
  • Now add cornflour mixed with 1 tbsp water.
  • Add cardamom powder.
  • Now add saffron strands.
  • Mix well and switch off the heat, let it cool.
  • When it cools down, fill into matkas.
  • Garnish with chopped pistachios and saffron strands.
  • Cover with aluminum foil.
  • Keep in freezer for 6 hours.
  • After this take out from fridge.
  • Enjoy kesar pista matka kulfi.

Notes/Tips

For good texture keep it in freezer for atleast 6-7 hours.
