Ingredients

  • Maida
  • Baking Soda
  • Sugar
  • Saffron
  • Green Elaichi Powder
  • Lemon Juice
  • Yellow Food Coloring (optional)

Instructions

  • Make a batter by mixing maida, baking soda with water and keep it to rest. In another pan take water and add sugar to it, place it on heat. Boil till sugar dissolves and becomes sticky. Add saffron and Elaichi Powder and also add color as desired.
  • Take batter in muslin cloth, take ghee in a flat bottom pan, cut short end of the batter pipe and start making jalebis in circular motion in ghee. When brown, take out and immediately put in the sugar syrup and dip for 2-3 minutes. Rinse and take out.

Notes/Tips

Keep the heat on medium and the mixture for jelebi should be like dosa type batter, it should not be too much flowing, batter needs at least 20 minutes rest.
