Ingredients

  • 1 tsp ghee
  • 1 ltr full fat milk
  • 1/2 cup grated bottle gourd
  • 1/3 cup sago or sabudana
  • 1/4 tsp cardamom powder
  • 2 tbsp dry fruits as par your choice
  • Pinch green colour (optional)
  • 1/2 cup sugar
  • 2 spoon cashew nuts paste

Instructions

  • Heat milk until 1 boil. Meanwhile grate soft part from bottle gourd.
  • Heat ghee in pan and saute bottle gourd with continue stirring. Cover with lid and cook it for 3 to 4 minutes.
  • Boil milk till 25 percent amount of milk reduce. (From 1000 ml milk boil till 750 ml reduce...it means you have to burn 250 ml milk.)
  • Wash sago and add with milk. Cook it till translucent. Sago floating on top is sign of perfect cook of sago.
  • Add bottle gourd and let cook it for 5 minutes with milk. At last add cashew nuts paste and cook it for 5 minutes cover with lid.
  • Dilute food colour in 1 spoon milk and add in kheer followed by cardamom powder. Mix properly.

Notes/Tips

Sprinkle grated or chopped dry fruits. Our kheer is ready to serve.
