- Boil 3 potatoes and cube them.Make a chutney with chopped coriander. Add 2 green chillies, ginger paste,lemon juice,tamarind paste,rock salt,chaat masala and 4 small pieces cubed boiled potatoes alongwith chopped coriander and grind to a smooth paste.Adding potatoes helps in binding the chutney to the potatoes and also gives a shiny texture.
- Heat oil in a pan and sprinkle cumin seeds.When they splutter,add the cubed potatoes and saute till light brown..Add roasted cumin powder, black pepper powder and dhaniya (coriander) chutney.
- Saute till potatoes are well coated with dhaniya chutney. Sprinkle a teaspoon of ghee over the potatoes and garnish with toasted sesame seeds.Serve this spicy and tangy dhaniya aloo chaat as it is as a teatime snack or as a side dish with rajgira pooris,buckwheat parathas, phulkas in breakfast, lunch or dinner.
