- Clean & cut sweet potatoes. Steam for 15-20 minutes till soft. Keep the liquid from the steamed potatoes. Weigh the steamed sweet potatoes.
- Mash the sweet potatoes, then add sugar & salt, mix. Add the tapioca flour, mix till you get a smooth dough. If the dough is a bit dry, just add a little liquid from the steamed sweet potatoes or just use water.
- Roll into a long log, then cut into bite sizes. No need to further shape into balls coz they will auto shape into balls when fried & pressed.
- Warm oil in a wok or any deep frying pot / pan using medium low heat. Fry the sweet potato balls, once they firm up a little (approx after 40 sec), stir to prevent sticking, use a slotted ladle to press the balls down against the bottom of wok, the balls will expand. Continue to press & lift, till they are golden brown.
- Strain & place on a kitchen paper towel to absorb some oil. Serve while still hot or warm. ENJOYYY!!!
