Ingredients

  • 2 cup basmati rice
  • 4 cup coconut milk
  • 2 onion
  • 2 tomatoes
  • 2 spring curry leaf
  • 1 g mint leaf
  • 1 g coriander leaves
  • 4 cloves
  • 5 cardamom
  • 2 stick cinnamon
  • 1/4 cup oil
  • 2 tbsp ghee
  • 1 tsp turmeric powder
  • 2 stick pandan leaves

Instructions

  • Wash rice grains 2-3 times in water to remove excess starch. Soak them for 20 minutes. Washing them will also prevent them from becoming sticky while cooking. After 20 minutes, drain soaked rice.
  • Heat ghee and oil in a pot or rice cooker Add cinnamon, cloves, cardamom, pandan leaves and sauté for few seconds. Add chopped onion and sauté until it turns light brown.
  • Add tomatoes, mint, coriander curry leaves, green chilli,and ginger-garlic paste and sauté low flame for a minute.then add turmeric powder mix it well.
  • Then add coconut milk.You may need to add more or less water depending on the rice. Then add salt taste the water and check the salt. If needed add more.once the water comes to boil add rice and cook on a high flame for 5 minutes.Then cook on a very low flame until the rice is done.
  • Transfer coconut rice to a serving bowl or plate. Garnish with raisin s and cashew s, coriander leaf.serve with coconut rice any chicken curry, mutton curry or fish curry.you can also eat it plain.
