- Chop the boiled potato when completely cool.
- Heat oil in a pan. Add cumin seeds and turmeric powder, hing and allow to the cumin seeds to crackle.
- Add chopped potatoes and fry for 2 minutes till crispy. Then add green chillies and grated ginger. Mix well with potatoes.
- Now mix amchur powder, garam masala, salt and half of coriander leaves. Mix well.
- Mix then, chilli flakes, black pepper, sugar and mix nicely.
- Garnish with rest of chopped coriander leaves and serve hot.
