Ingredients

  • 140 grams butter, unsalted
  • 250 grams sugar, granulated
  • 100 grams carob powder
  • 3 tablespoons honey
  • 1 pinch salt
  • 2 large eggs
  • 1 tablespoon almond extract
  • 2 large bananas
  • 60 grams all purpose flour
  • 90 grams crushed chocolate
  • 2 large bananas, sliced
  • Honey/chicory syrup

Instructions

  • Preheat the oven to 180 celsius & align your baking form with parchment paper Beat the butter until creamy, then add the sugar, honey and salt
  • Take your eggs & separate the yolks and egg whites, then beat in separate bowls until the yolks are slightly creamy and the whites have turned into snow Combine the eggs with the butter and mix until fully combined
  • Add the extract of your choice, the two mashed bananas (slowly!) & mix Gently fold in the flour & crushed chocolate Pour the batter into the prepared baking form and top with the toppings above/of your choice
  • Bake for around 45 minutes, or until a toothpick inserted into the middle of the dough comes out mostly clean but still slightly moist
