Arbi sabji in curd curry

Ingredients

  • 250 gm arbi, washed,
  • 4 tbsp mustard oil, For vrat use ghee
  • 1/2 tsp ajwain,
  • 1 tsp ginger paste,
  • 1 med sized onion chopped finely,
  • 1/2 tsp garlic paste,
  • 1/2 tsp haldi powder,
  • 1 tsp green chilli paste,
  • 1.5 tsp dhania powder,
  • As taste Salt
  • 1 cup dahi,
  • 1 tsp besan,
  • 1/2 tsp garam masala powder,

Instructions

  • Boil arbi, cut into roundals, keep aside.
  • Take a wok, add oil, heat it. Moderate the flame, add ajwain, let it splutter.
  • Now add onion, increase the flame, stir fry it until light brown.
  • Add arbi pcs now, stir fry it for 2 minutes. In goes ginger garlic paste, saute it until rawness is released.
  • Now add green chilli paste, haldi & dhania powder, also add salt. Mix it well. Sprinkle lil water, cook it until oil has surfaced.
  • Blend dahi & besan nicely, add in the masala. Mix it well, give a boil.
  • Add garam masala powder now, mix it well.
  • Lower the flame, cover it with the lid, cook it until oil has oozed out & gravy becomes saucy.
  • Turn off the flame, open the lid after 5 minutes. Take out in a serving bowl, garnish it with dhania leaf & slitted green chilli.

Notes/Tips

Don’t use onion, garlic and besan if you are preparing for vrat. Replace these by using 7-8 pieces of cashews
