- Boil milk till reduced to half. Add some warm milk to milk powder and mix well. Add this to the boiling milk.Also add sugar while boiling milk.Set aside till lukewarm.
- Meanwhile peel,slice and cube mangoes.Blend in a blender and strain the pulp through a seive to get a smooth puree.Toss this puree in a non-stick wok or pan till moisture dries.
- Add this pulp to the lukewarm milk alongwith curd,cardamom powder and whisk well with a whisker till well blended,smooth and creamy.Pour the mango milk yogurt mixture in a ceramic bowl or earthen pot and set in a warm place covered for 5 to 6 hours or till set.
- After it is set, refrigerate for at least 2 hours. Garnish with mint leaves or chopped dry fruits of choice.Serve chilled, a delicious Aam Doi or Mango Yogurt as an aftermeal dessert to guests or your family in lunch or dinner.
