Here is a carefully scoured vegetable meatball recipe that our team loves and we can’t wait for you to try these meatless meatballs out!
Here is the vegetarian meatballs recipe we absolutely love!
Ingredients-
- 1½ cups finely chopped mushrooms
- ½ cup grated cauliflower
- ¼ cup grated Parmesan cheese ( you can skip this)
- 1 medium onion, finely chopped
- 1½ tablespoons finely chopped garlic
- 1 cup oats
- Salt to taste
- Crushed black peppercorns to taste
- 1-2 green chillies, finely chopped
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ cup cornflour
- Dried breadcrumbs for coating
- Oil for deep-frying
Method-
1. Mix together cauliflower, cheese, mushroom, onion, 1 tablespoon garlic, oats, salt, crushed peppercorns, green chillies, oregano and thyme in a bowl. Add cornflour and mix well.
2. Divide the mixture into equal portions and shape it into balls. Coat with breadcrumbs.
3. Heat sufficient oil in a kadai. Deep-fry mushroom-vegetable balls till golden brown. Drain on absorbent paper.

- Dry Spices- 3 cloves, 1 tbsp peppercorn, 1 tbsp cumin, 1 small cinnamon stick, 2 bay leaves, red chilli dry
- Turmeric
- Ginger garlic paste
- Dried thyme
- ½ cup Roasted peanut butter, Or you can roast your peanut butter for 10 minutes
- 1 onion diced and roasted ( dice, put in into skewers, brush with oil and roast over flame)
- ½ bell pepper diced and roasted (dice, put in into skewers, brush with oil and roast over flame)
- 1 finely chopped onion
- Chopped Garlic and Ginger
- 1 onion diced and roasted ( dice, put in into skewers, brush with oil and roast over flame)
- 2 tomatoes diced
- Peanut oil
- Salt and pepper
Method
For Soup with vegetable meatballs -
- Dry roast all the dry spices and crush them into powder.
- Blend the roasted peanut butter, tomatoes, diced and roasted bell pepper and onions together with 400 ml of water.
- In a saucepan, add peanut oil, dry spice powder, turmeric and finely chopped onion.
- Once the onions caramelise, add vegetable meatballs and roast. Turn off the heat after 3 to 4 minutes and let it rest.
- In another saucepan, add chopped garlic and ginger and peanut butter mix
- Cook till the oil separates. Once that happens, pour it over the vegetable meatball mix and cook for 15 minutes.
- Add water if the soup is too thick. Season with salt, pepper and thyme and serve!
