Ponk is a Gujarati delicacy. It is a specialty of Surat. In Maharashtra, it is called hurda. Basically, it is tender roasted sorghum (Jawar/jowar) grains. It is a type of grain having a tiny pearl-like shape, green in color, soft, juicy, and slightly sweet in taste .available during winters. Peak season is December and January. If you will visit Surat or nearby cities during winter you will found stalls of ponk and a different variety of dishes made of ponk. And believe me, there are always crowded. You have to wait for your turn to buy it. It is not only tasty but very healthy. It is gluten-free. High in calcium, fiber, protein, and some minerals like phosphorus, iron, zinc, and magnesium. It controls diabetes. Improve red blood cell count and also improve digestion. The traditional way to eat ponk is with tangy spicy sev, which are available in different flavors like mint, lemon pepper, garlic, and many more. But there are also a variety of delicious dishes made of ponk which you can enjoy, Like ponk vada, patice, bhel, chilla (Pudla) and so on, or eat just plain as it is.
