Recipe: Soak handful of raw rice. Take a pressure cooker..make sure its clean. Add 1.5 ltr of full fat milk, bring it to boil. Keep stirring with laddle to collet the top layer cream of milk n mix it in milk again. Add the soaked rice w/o water, bribg it boil.. Pressure cook for 5 to 6 whistles on high flame Let the pressure settle down, add 2 cips of sugar or brown sugar to the cooked rice The payasam will become lil watery as the sugar melts, keep on stirring in 2 to 4 mins it will start to thicken. Switch of the flame, as it cools down the payasam will thicken more.. Njoi..hot or cold..it tastes yum both ways.. PS: donot add cardamom powder, as its essence will over powder the flavours of cooked rice in creamy milk.
