There are many desserts that you can make using mangoes, but there is nothing like an Indian sweet with the fresh and sweet mangoes in it. Isn't it! Here is a mango twist on a classic Indian dessert Phirni. It is a rice pudding made using rice and flavoured with saffron and bites of mango in it. It makes for a great weekend sweet after your meals or to serve to your guests, when they come to visit you for lunch or dinner. Instructions:- Soak rice for 30 mins. Grind it into a coarse paste. Boil milk. Add the grinded rice paste to the milk. Add sugar and nuts. Keep stiring continuously. Add a few strands of saffron and cook well. Turn off the flame when it turns thick. Add in chopped mangoes and set in desired bowls. Serve chilled topped with more mango pieces and nuts.
