Ingredients

  • Butter cookies or marie or parle G 100 grams
  • Melted butter 25 grams
  • Cream cheese 200 grams
  • Sugar 1 tablespoons
  • Condensed milk 3 tablespoons
  • Mango puree of fresh mango 2 units
  • White chocolate, melted 1/4 cup
  • Gelatin 1 tablespoons
  • Whipped cream 1 cup
  • Orange food colour drop (optional) 1 units

Instructions

  • Firstly Grind the cookies to a fine powder in a mixer Jar. Then add the melted butter in it and pulse it till it forms a wet mud-like consistency.
  • Pour this mixture into a cheesecake tin and press it down with help of hand or a spoon.
  • Keep this in fridge for about 30 minutes to 1 hour.
  • In a bowl, combine cream cheese, sugar and condensed milk. Beat these three till it's creamy.
  • Next add in mango puree, mango essence(optional), white chocolate and beat well for a minute or till combined.
  • Now fold in the whipped cream gently with a spatula. And lastly add the gelatin into the mixture and give it a mix. Gelatin can be avoided totally but then the cheesecake must be kept for a much longer period in fridge!
  • Pour this mixture onto the Biscuit mixture. Even it out with off-set spatula.
  • Let it rest in fridge for about 8 to 10 hours or preferably a whole day!
  • Top it with aamras puree or mint leaves and enjoy!
