Sweet mango pickle(gur aam)

Ingredients

  • 1/2 kg mango, 400 gm jaggery
  • 1 tsp turmeric powder, 1 tsp red chilli powder
  • 2 tsp dry roast cumin seeds powder
  • 3 dry red chilli ,1 tbsp panchforon
  • 2 tbsp mustard oil, 2 tsp vinegar
  • as required Salt to taste

Instructions

  • Peel and desseds the mangoes. Cut the mangoes in elongated shape.
  • Marinate the mango slice with turmeric powder, red chilli powder and salt.
  • Spread the marinated mango slice in a big plate and dry under 3 to 4 hours.
  • Mean while take grated jaggery and little water I a pan. Melt them properly.
  • In a pan heat mustard oil and add dry red chilli, panchforon.
  • After that add sundried mango slices and cook until they are soft. Add melted jaggery into mangoes. Cook under low medium flame until jaggery syrup becoming thick and it is one thread kind consistancy.. Switch off the gas.
  • Lastly boil vinegar. Reduce 2 tsp to 1 tsp. Add it in the pickle. Add dry roasted cumin seeds powder also at this stage.
