  • Ghee
  • Cashew
  • Raisins
  • Vermicelli
  • Sugar
  • Full cream milk
  • Cardamom powder
  • Saffron
  • Milk

Instructions

  • Place a heavy kadhai over medium heat and pour in ghee. Once hot, toss in cashew nuts and sauté till golden. Add raisins and stir till they plump up. Tip in vermicelli, stir and roast in the oil till golden, 1 to 2 minutes. Pour in hot water and stir till the vermicelli softens, 1 to 2 minutes. Tip in sugar and stir till dissolve and reduced just a bit, about 3 minutes. Pour hot milk over the vermicelli. Stir well to mix. Bring to a boil and then reduce heat to medium. Toss in cardamom powder, stir, and cook for 4 to 5 minutes Stir in the saffron milk and simmer for 1 minute. Remove from heat and serve either hot or cool.
