Instructions

  • Soak basmathi rice for 30 min and drain the water. Heat water in a vessel add whole spices. Once it started boiling add salt, soaked basmathi rice and cook for 5 min or until rice is half cooked. Boil the veggies half cooked in microwave. Heat ghee in a pan add sliced onion, green chilli and saute for a minute. Add crushed ginger garlic paste and fry till raw smell goes away. Now add chopped tomatoes, red chilli powder, coriander powder, biryani masala, turmeric mix well and saute till tomatoes turns soft. Transfer half boiled veggies , mix well. Then add ½ cup thick curd, salt and mix well. Boil the curry for 2-3 min. In oven safe dish first layer with veg curry. Now layer with half cooked rice. Followed by fried onions, cashew, chopped mint leaves. Then again add second layer with veg curry, rice, fried onions, cashew, chopped mint coriander leaves. Cover the tray with aluminum foil and bake at 400 F / 210 C for 20 minutes. Remove from the oven and serve hot biryani with raita.
