Rista is a traditional Kashmiri recipe which is usually made with Lamb or Mutton meatballs, where the meat enriched with fat is pounded over a grinding stone with the help of a wooden hammer along with Cardamom, ginger, and salt, to make a much finer paste
This process is very tedious and takes lot of time & Effort. The finely pasted keema is then shaped out into meatballs which are then simmered in thin red gravy enriched with beautiful aromatic whole spices, red chilli powder, onion, ginger, garlic And oil
In my recipe I have replaced the Lamb or mutton with boneless chicken that I have pounded it in the same process along with the spices and salt as exactly mentioned before.
Guess what! It took me less effort and timeš as chicken takes less time to tenderise as compared to Lamb and mutton...
The chicken meatballs are then cooked in the same gravy mentioned before. The beautiful aromatic Chicken Ristas get cooked in no time..
