Mexican Tacos
Ingredients-
- 1 Tbsp. olive oil
- 1 pound of ground chicken
- 2 tablespoons tomato paste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 cup water or chicken broth
- 1 teaspoon chilli powder
- 1 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- Corn tortilla or flour tortilla
- Diced avocado or guacamole
- 1 cup cheese, shredded
- 2 tomatoes diced
- 1 medium white or red onion diced
- Salsa
- Finely chopped fresh cilantro
- Sour cream
- Lime wedges
Method-
- Heat oil in a pan and add the chicken when oil is sizzling.
- Stir as the meat cooks evenly and begins to brown. This process will take between 6-8 minutes.
- Add the broth, tomato paste, cumin, chilli powder, oregano, garlic powder, sea salt, and black pepper to the pan.
- Reduce the heat to medium and allow the meat mixture to simmer for about 3-5 minutes until the sauce becomes thick. Stir occasionally and then set aside.
- Heat your tortillas by putting one tortilla at a time into a hot ungreased thick-bottom pan for 30 seconds on each side.
- For each tortilla, add about 2-3 tablespoons of your taco meat mixture. Top the ground beef mixture with onion, cheese, cilantro, and tomato.
- Add whatever other garnishes you want to your tacos, including sour cream, salsa,
- Squeeze the lime juice over your assembled tacos and enjoy!
Vegetarian Taquitos
Ingredients-
- 1/2 cup cooked black beans
- 1/2 cup Corn
- 1 cup shredded cheese
- 1 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 12 corn tortillas
Method-
- Preheat the oven to 200 C
- Place the beans, corn, cheese, cumin, garlic powder, and salt in a bowl and stir to combine.
- Place two corn tortillas at a time in between two sheets of damp paper towel and microwave for 20-30 seconds to loosen
- With one tortilla in front of you place 2 tablespoons of the mixture on the side closest to you and roll it up.
- Place the taquitos seam-side down on a foil-lined cookie sheet, spray the tops lightly with cooking oil and bake for 25 minutes.
