International Waffle Day

Celebrated on 25th March, International Waffle Day is an excuse for us to indulge in the deliciousness of crispy waffles. With roots in Sweden, it is now loved worldwide. Do you love Belgian waffles? Waffle cookies or a waffle on a stick? Let’s celebrate this golden delight today! 

Let’s explore recipes for different exciting waffles -

Belgian waffles

Ingredients- 

  • 2 cups (250g) all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs (separated)
  • 1¾ cups (420ml) milk
  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions - 

  1. Preheat the waffle iron. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, separate the egg whites and yolks.
  3. In a medium bowl, whisk together egg yolks, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. In a separate clean bowl, beat the egg whites until stiff peaks form (use a whisk)
  6. Gently fold the whipped egg whites into the batter to create a light and airy texture.
  7. Grease the waffle iron with butter or non-stick spray. Pour the batter into the waffle iron and cook according to the waffle maker’s instructions. Keep it until golden brown and crispy.
  8. Serve hot with maple syrup or chocolate sauce.  

Waffle cookies

Ingredients- 

  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional, for extra flavour)

Instructions - 

  1. Preheat your waffle iron and grease it with butter 
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon
  3. In another bowl, whisk the eggs, melted butter, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring until smooth
  5. Drop a tablespoon of batter into the waffle iron. Close and cook for 1-2 minutes or until golden brown and crispy.
  6. Transfer cookies to a wire rack to cool. They will crisp up as they cool. Serve plain or dust with powdered sugar, Nutella or melted chocolate.

Vegan waffles

Ingredients- 

  • 1 ¾ cups (220g) all-purpose flour
  • 2 tbsp sugar (or maple syrup)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 ½ cups plant-based milk (almond, soy, oat, or coconut)
  • ¼ cup melted coconut oil (or vegetable oil)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional, for extra flavour)

Instructions - 

  1. Preheat your waffle iron and lightly grease it with oil. 
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon
  3. In another bowl, whisk the plant-based milk, melted coconut oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined
  5. Pour batter into the waffle iron and cook according to the waffle maker’s instructions until golden brown
  6. Enjoy warm with maple syrup or fresh fruit

Chocolate waffles

Ingredients- 

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (50g) cocoa powder
  • ¼ cup (50g) sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 ½ cups (360ml) milk
  • ½ cup unsalted butter (melted) or vegetable oil
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (optional, for extra richness)

Instructions - 

  1. Preheat your waffle iron and lightly grease it with butter. 
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Fold in the chocolate chips.
  5. Pour the batter into the waffle iron and cook for 3-5 minutes or until crispy and cooked through.
  6. Enjoy, topped with whipped cream, fresh berries or chocolate sauce

Honey waffles

Ingredients- 

  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 large eggs
  • 1 ½ cups (360ml) milk
  • ⅓ cup honey
  • ½ cup unsalted butter (melted) or vegetable oil
  • 1 tsp vanilla extract

Instructions - 

  1. Preheat your waffle iron and lightly grease it with butter. 
  2. In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk eggs, milk, honey, melted butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined (do not overmix)
  5. Pour the batter into the waffle iron and cook for 3-5 minutes or until crispy and cooked through.
  6. Drizzle with extra honey and enjoy!

Whole wheat waffles

Ingredients- 

  • 1 ½ cups (190g) whole wheat flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 large eggs 
  • 1 ½ cups milk
  • ¼ cup honey or maple syrup
  • ¼ cup melted coconut oil or vegetable oil
  • 1 tsp vanilla extract

Instructions - 

  1. Preheat your waffle iron and grease it with butter or oil
  2. In a large bowl, whisk together whole wheat flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk eggs, milk, honey (or maple syrup), melted oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined
  5. Pour batter into the waffle iron and cook for 3-5 minutes or until golden brown
  6. Enjoy with fresh fruit or yoghurt

Red velvet waffles

Ingredients- 

  • 1 ½ cups (190g) all-purpose flour
  • 2 tbsp cocoa powder
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 ¼ cups (300ml) buttermilk (or milk + 1 tbsp vinegar for homemade buttermilk)
  • ¼ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring

For cream cheese - 

  • 4 oz (115g) cream cheese, softened
  • ¼ cup milk
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract

Instructions - 

  1. Preheat your waffle iron and lightly grease it with oil or butter.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs, buttermilk, vegetable oil, vanilla extract, and red food colouring.
  4. Slowly mix the wet ingredients into the dry ingredients until just combined
  5. Pour the batter into the waffle iron and cook for 3-5 minutes until golden
  6. Prepare cream cheese drizzle – Whisk together cream cheese, milk, powdered sugar, and vanilla until smooth.
  7. Drizzle waffles with cream cheese glaze and top it with fresh berries. Enjoy!

Caramel waffle cookies 

Ingredients- 

For the dough - 

  • 2 cups (250g) all-purpose flour
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 packet of instant yeast
  • ¼ cup (60ml) warm milk
  • 1 large egg
  • ½ tsp cinnamon
  • ¼ tsp salt

For the caramel filling - 

  • ½ cup (100g) brown sugar
  • ½ cup (120ml) light corn syrup or honey
  • ¼ cup (60g) unsalted butter
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)

Instructions - 

  1. In a small bowl, mix warm milk and yeast. Let it sit for 5 minutes until foamy.
  2. In a large bowl, combine flour, sugar, cinnamon, and salt. Add melted butter, egg, and yeast mixture.
  3. Knead into a soft dough (about 5 minutes). Cover and let it rest for 45 minutes.
  4. For the caramel filling - In a saucepan over medium heat, melt butter, brown sugar, and corn syrup (or honey). Stir constantly until smooth and slightly thickened. Remove from heat and stir in vanilla and cinnamon. Let cool slightly.
  5. Preheat your waffle iron. Divide the dough into small balls, Roll each into a thin disc.
  6. Place each disc in the waffle iron and cook for 1-2 minutes until golden.
  7. While warm, carefully slice each waffle in half horizontally. Spread caramel filling on one half and press the other half on top. Let it cool for the caramel to set
  8. Indulge into it with tea or coffee.
