Healthy Recipes to Satisfy Evening Cravings

Did you know 7th April is celebrated as World Health Day 2022? This World Health Day, we plan to get ourselves a meal makeover. We all have cravings, even when we are trying to go healthy. But switching to a healthier diet doesn't mean you have to eat food which you don't like. It means finding a balanced, and delicious meal which can replace your craving!

Rajma Cutlet 

Ingredients 

  • 1 cup rajma (soaked overnight)
  • 1 big potato boiled and grated
  • 2 green chillies
  • 4 cloves of garlic
  • 1 tsp each garam masala, coriander, turmeric, 
  • ½ tsp jeera powder, amchur
  • Salt and pepper 
  • 1 tbsp olive oil

Method

  • Crush soaked rajma, chilli, olive oil and garlic cloves together.
  • Put all the spices and salt and pepper in the grated potato and mix.
  • Add crushed rajma mix to the potato and combine well.
  • Make small balls out of the mixture and flatten them by hand or spatula.
  • Heat a pan and put 1 spoon of oil or butter.
  • Fry the cutlets and serve with pudina chutney!

You can also freeze the balls for up to 2 days in a ziplock bag. All you have to do now, put it in a subway bread with some barbeque sauce and honey mustard!

Beetroot Tzatziki

Ingredients-

  • 3 garlic cloves, crushed
  • 1 large (about 600g) cooked beetroot, peeled
  • 100ml thick Greek yoghurt
  • 1 tbsp chopped fresh dill
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • Grilled bread, to serve

Method-

  1. Grate beetroot into a sieve over the sink. Set aside for 10 minutes to drain. Press with the back of a spoon to remove excess liquid.
  2. Place remaining ingredients in a non-metallic bowl, add the beetroot and stir well to combine.
  3. Serve with the grilled bread or as part of a meze plate.

Hummus & Pita

Ingredients-

  • 3 cups cooked chickpeas, peeled
  • 1 to 2 garlic cloves, minced
  • 3 to 4 ice cubes
  • ⅓ cup  (79 grams) tahini paste
  • ½ tsp kosher salt
  • Juice of 1 lemon
  • Hot water (if needed)
  • olive oil
  • Sumac

Method- 

  1. Add chickpeas and minced garlic to the bowl of a food processor. Puree until a smooth, powder-like mixture forms.
  2. While the processor is running, add ice cubes, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run the processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency.
  3. Spread in a serving bowl and add a generous drizzle of olive oil. 
  4. Add a few chickpeas to the middle, if you like. Sprinkle sumac on top. 
  5. Enjoy with warm pita wedges and your favourite veggies.
