Best Salad Pizza Recipe

By now we know that fusion recipes are the future. While the authentic pizza with crusty bread, tomato sauce and cheese will remain evergreen, Salad pizzas, fruit pizzas etc have taken over the new and trendy place of the internet. 

Many people will say it’s just a pizza salad, but that’s just how great dishes are created - trying and testing! 
So here we are again with the best salad pizza!

Recipe -1

Ingredients - 

For the Chopped Salad:

  • romaine lettuce
  • cherry tomatoes
  • chickpeas
  • salami
  • Feta
  • Pepperoncini (optional)
  • olives
  • parsley – or any other herbs you like
  • Italian dressing 

Pizza: 

  • Flatbread pizza crust 
  • tomato sauce
  • mozzarella cheese

Instructions- 

Salad: Chop all your salad ingredients and toss with some dressing. I like when it has a little time to sit and marinate together in the dressing.

Pizza: Bake your crust for about 5-7 minutes at 375 degrees to get it crispy. If it needs more time, give it up to 10 minutes. Top with a light layer of sauce and cheese and return to the oven until the cheese is melted.

Assembly: Top the pizza with the salad. Cut and serve. Yummy!

Recipe 2

Ingredients-

  • Pizza Crust
  • Approximately 1 cup fresh tomatoes (cherry tomatoes, halved or full size sliced or a combination)
  • Olive oil
  • Salt
  • Mushrooms, sliced
  • Fresh mozzarella, 6-8 slices 
  • Prepared Balsamic glaze
  • 1 handful of Fresh Basil, chopped

For Pesto :

  • 2 cups fresh basil leaves
  • 5 to 6 garlic cloves
  • 2 tbsp roasted pistachios
  • ½ cup parmesan cheese
  • ⅓ cup olive oil
  • pinch of sea salt + black pepper

Instructions-

Roasted Tomatoes and Mushrooms

Preheat oven to 400 degrees and place parchment paper on two baking sheets.

Tomatoes: Gently toss tomatoes in olive oil and a dash of salt. Place in a single layer on a baking sheet and bake for 10 minutes. Set aside

Mushrooms: Gently toss mushrooms in olive oil and place them in a single layer on baking sheet. Sprinkle with salt to taste and lots of basil. Bake for 25 minutes. Cool briefly and dice mushrooms. 

Pesto :

If making your own pesto, blend all the pesto ingredients together using a food processor or blender.

Note: I didn't have any trouble blending it in a blender but if too thick or difficult to blend add an additional 1-2 tbsp olive oil

Set aside

Pizza Salad

Preheat oven to 375 degrees. (Could bake at 400 degrees with veggies, just bake for a few minutes less)

While mushrooms and tomatoes roast, bake Cali'Flour pizza crust for 7-10 minutes.

Add the pesto to the pizza crust, then fresh mozzarella and melt the fresh mozzarella, approximately 5 minutes.

Top the melted cheese with roasted tomatoes, roasted mushrooms, balsamic glaze and fresh basil.
