Rainy days call for something special. Whether it's a long drive, going to a Dhaba or just making something at home for your loved ones, enjoying the rainy season is a must! The first thing that comes into our mind when we think of rain is pakode, so we thought why not give our secret recipe out today! Here we go-
Palak pakode (Indians can fry anything & make it tasty)
Ingredients-
- ½ cup besan
- 200 g washed palak, chopped
- Chopped Pudina leaves
- ½ cup water
- ¼ cup rice flour
- Chopped green chili
- Spices- chilli powder, amchur, dhaniya powder, salt
- Baking soda-1 tsp
- Oil for frying
Method-
- Make a batter by mixing besan, rice flour, baking soda and the spices.
- Let the batter sit for 15 to 20 minutes
- Mix the spinach with pudina leaves and green chillies
- Add salt to the mixture and drain access water
- Heat oil in a kadhai till its bubbling
- Now take a spinach mixture and add it to the batter
- Take a handful of batter-covered spinach and put it in the oil
- Fry these according to the size you like.
- While hot, sprinkle some chat masala and serve with pudina chutney!
Aloo Patty/ Vegetable puff
Ingredients-
- Puff pastry sheet
- Vegetable oil
- Boiled & mashed potato
- Chopped chillies
- Chopped onions
- Chopped ginger
- Ginger-garlic paste- 1 tsp
- Halved peas
- Asafoetida
- Spices- Garam masala, amchur, salt, coriander powder, haldi, jeera powder, chat masala, red chilli powder
Method-
- Heat oil in a seasoned wok or non-stick kadhai.
- Add asafoetida, ginger, onion, chillies & saute
- Add ginger-garlic paste and add all the spices to cook.
- Add 1-2 tbsp of water if the spices start burning
- Add the halved peas and saute
- Add the mashed potatoes and cook them for 2 to 3 minutes
- Adjust the seasoning and set it aside to rest.
- When the filling has cooled down, take out the puff pastry and cut them into squares
- Put the filling in the centre of the square and then fold it into a triangle
- Make sure, the ends are closed and then bake the pastry in the oven at 180 degrees.
Your vegetable puff pastry is ready!
